Vodka Battered White Perch
Ingredients

- PurePac White Perch
- 1 Cup Corn Starch
- 3/4 Cup Flour
- 1/4 TSP Turmeric
- 1 1/2 oz Vodka
- 1 Cold Beer
- 2 pinches salt
- 1 pinch white or black pepper
Instructions
- Heat fryer to 325 degrees
- Mix all dry ingredients
- Add vodka and beer
- Rinse and pat perch dry with paper towel
- Dredge White Perch in fresh flour
- Dip into batter mix and place in hot oil
- When fish floats, turn and continue to cook for 3 minutes
- Remove and drain on paper towel
Notes
Serve with lemon, tartar sauce and coleslaw.
