Vodka Battered White Perch

  • PurePac White Perch
  • 1 Cup Corn Starch
  • 3/4 Cup Flour
  • 1/4 TSP Turmeric
  • 1 1/2 oz Vodka
  • 1 Cold Beer
  • 2 pinches salt
  • 1 pinch white or black pepper


  • Heat fryer to 325 degrees
  • Mix all dry ingredients
  • Add vodka and beer
  • Rinse and pat perch dry with paper towel
  • Dredge White Perch in fresh flour
  • Dip into batter mix and place in hot oil
  • When fish floats, turn and continue to cook for 3 minutes
  • Remove and drain on paper towel


Serve with lemon, tartar sauce and coleslaw.
