Fried Smelt with Lemon Herb Aioli and Garlic Naan Chips

  • 3/4 lbs Smelt
  • Flour
  • Egg wash
  • Panko breadcrumbs
  • 250 ml Mayonnaise
  • 1/2 Lemon (juice,rind)
  • 1 sprig Thyme(chopped)
  • 1/4 sprig Rosemary (chopped)
  • 1 sprig Chervil( chopped)
  • Garlic Naan chip
  • 2 Naan bread
  • Melted garlic butter
  • 1/4 sprig Rosemary (chopped)
  • 1 sprig Thyme (chopped)
  • Salt and pepper
  • Parmesan cheese for garnish

Instructions

  • Baked 350° 10-12mins
  • Preheat the oven to 350 degrees fahrenheit for the naan chips. Make the Lemon Herb Aioli by mixing together the mayonnaise, lemon juice, thyme, rosemary and chervil.
  • Cut your naan bread into triangles, dip in melted butter and sprinkle chopped rosemary, chopped thyme and salt and pepper on both sides and spread onto a baking sheet. Bake for 10-12 minutes. Once done garnish with parmesan cheese.
  • For the smelt, pat dry and coat in flour and then egg, do this twice before coating in the panko breadcrumbs. Heat your oil until hot and deep fry the smelt until golden brown. Dry excess oil with a paper towel.
  • Plate and enjoy as an appetizer!
