Sauteed Walleye with Pineapple Salsa

Ingredients

  • Walleye fillets (4-6)
  • 3 tbsp salted or garlic butter

Pineapple Salsa

  • 1/2 pineapple skinned and (diced)
  • 1 whole cucumber (diced)
  • 1 whole tomato (diced)
  • 1/2 red onion (diced)
  • 1/2 red pepper (diced)
  • 1 clove garlic (minced)
  • 1/2 each of lime, orange, lemon ( rinds grated) juiced
  • 1/4 bunch parsley
  • 1/4 honey
  • 1 tbsp whole grain mustard
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  • Dice ingredients for Pineapple salsa and mix in a large bowl.
  • Pat Walleye dry and score skin diagonally with a sharp knife.
  • Salt and pepper both sides of fish fillets.
  • Melt butter in a pan (we prefer cast iron) and wait until it gets hot.
  • Saute fish letting each side get a golden brown colour, about 2-3 minutes per side.
  • Baste with remaining butter.
  • Plate fish on top of your choice of vegetables.
  • Generously spoon Pineapple Salsa over walleye filets.
